I’ve built a lot of my cottage cheese recipes around breakfast and dessert, so I was genuinely surprised the first time I saw someone use it as a savory dinner ingredient instead.
A cold scoop of cottage cheese, sitting right next to warm taco-seasoned beef and crispy sweet potatoes, all pulled together with a drizzle of hot honey? I wasn’t sure about it until I actually made it.
It works. The cottage cheese acts almost like a cooling, creamy element the way sour cream or queso would in a normal taco bowl, except it’s bringing a lot more protein along with it. The hot honey on top ties the sweet, spicy, and savory elements together in a way that sounds unusual on paper and makes complete sense the moment you taste it.
This has become one of my favorite ways to hit my protein goals at dinner without another plain chicken-and-vegetables night.

My Favorite Trick
I roast the sweet potato cubes at a high heat (425°F) and don’t crowd the pan, which is really what makes them crispy instead of just soft and steamed. Give them room to actually roast, not stack on top of each other.
Why I Use Cold Cottage Cheese Instead of Warming It
The contrast is the whole point here. A cold, creamy scoop of cottage cheese against the warm beef and roasted sweet potatoes is what makes this feel like a real dish instead of just beef and vegetables with a protein add-on. Warming the cottage cheese loses that contrast completely.

Hot Honey Cottage Cheese Beef Bowl Recipe
Crispy roasted sweet potatoes, taco-seasoned ground beef or turkey, a cold scoop of cottage cheese, sliced avocado, and a generous drizzle of hot honey.

Ingredients
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
- 2 medium sweet potatoes, cubed
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 1/2 cups cottage cheese
- 1 avocado, sliced
- 2–3 tbsp hot honey
- Fresh cilantro, for topping
- Lime wedges, for serving
Optional Add-Ins
- Diced red onion or pickled red onion
- Shredded lettuce or cabbage for crunch
- Crumbled cotija or shredded cheddar
- Diced jalapeño for extra heat
Instructions
Step 1: Roast the Sweet Potatoes
Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet, not crowded, and roast at 425°F for 20–25 minutes, flipping halfway, until crispy and golden.
Step 2: Cook the Beef
While the sweet potatoes roast, brown the ground beef or turkey in a skillet over medium heat. Drain excess fat if needed, then stir in the taco seasoning along with the water amount listed on the packet. Simmer for a few minutes until thickened.
Step 3: Assemble the Bowls
Divide the roasted sweet potatoes and taco-seasoned beef between bowls. Add a generous scoop of cold cottage cheese to each, along with sliced avocado.
Step 4: Add the Hot Honey
Drizzle each bowl generously with hot honey.
Step 5: Finish and Serve
Top with fresh cilantro and a squeeze of lime. Serve immediately.
Optional Protein Boost
Want to push this past 40g of protein per serving? Add an extra 1/4 cup of cottage cheese per bowl, or use a leaner ground beef and stir in some black beans for extra protein and fiber.
A Few Easy Tweaks
- No hot honey on hand? Mix regular honey with a pinch of cayenne or a few dashes of hot sauce as a quick substitute
- Swap sweet potatoes for regular roasted potatoes or cauliflower if you prefer
- Make it milder by using a mild taco seasoning and cutting the hot honey in half
- Turn this into meal prep by roasting the sweet potatoes and cooking the beef ahead, then assembling fresh each day with cold cottage cheese and avocado
