Most of my breakfast recipes lean sweet — cottage cheese, oats, protein powder — but some mornings I want something savory instead. This bowl became my answer to that.
It’s basically a deconstructed breakfast burrito: scrambled eggs, black beans, a little cheese, and whatever toppings I have on hand, all in a bowl instead of wrapped in a tortilla. No tortilla means fewer refined carbs taking up room I’d rather use for protein and fiber, and it comes together in about the time it takes to make coffee.
I started making this one specifically because my breakfast rotation was getting cottage-cheese-heavy, and I wanted an egg-based option that still hit my protein goals without feeling like the same smoothie or oats bowl every morning.

Quick Tip:
I keep a container of rinsed, drained black beans in the fridge at all times so this comes together as fast as scrambling eggs alone. If I’m meal-prepping, I’ll pre-cook a batch of black beans with a little cumin and garlic powder so they’re already seasoned and ready to go.

Ingredients
- 4 large eggs
- 1/2 can black beans, drained and rinsed
- 1/4 cup shredded cheddar or Mexican-blend cheese
- 1/4 cup diced tomato
- 2 tbsp diced red onion
- 1 tbsp chopped cilantro
- Salt and pepper to taste
- 1 tsp olive oil or butter, for the pan

Eggs alone are a great protein source, but they don’t bring much fiber to the table. Black beans fix that in one step — they’re one of the easiest ways to add real fiber to a breakfast without changing the whole meal into something like oatmeal or a smoothie.

Instructions
Step 1: Warm the Black Beans

Step 3: Assemble the Bowl
Divide the eggs and black beans between two bowls. Top with cheese, diced tomato, red onion, and cilantro.
Step 4: Add Your Toppings
Add avocado, hot sauce, or any other toppings you like, and serve right away.

Want to push this past 30g of protein? Add an extra egg, stir in some cooked ground turkey, or top with a spoonful of Greek yogurt instead of sour cream.

- Turn it into a full burrito by wrapping it in a low-carb tortilla instead of eating it as a bowl
