Salmon was one of the first proteins I leaned on hard once I started paying attention to how much protein I actually needed on a GLP-1 medication.
It’s soft, it’s easy to eat in smaller portions on the days my appetite is low, and unlike chicken breast, it never feels dry or like a chore to get through.
This chickpea salmon quinoa bowl came out of wanting something more substantial than a plain salad for lunch, but still easy to make ahead. Quinoa gives it some staying power, chickpeas add extra fiber (which I’ve written about needing more of on GLP-1s), and the lemon-herb dressing ties it all together without making the whole thing feel heavy.
I make a big batch of the quinoa and chickpeas on Sunday, then just add fresh salmon through the week — sometimes leftover from dinner, sometimes a quick air-fryer fillet made just for the bowl.

Meal Prep Tip:
I cook a big batch of quinoa and prep the chickpeas and dressing all at once on Sunday, then store them separately from the salmon. That way I can add freshly cooked or leftover salmon throughout the week instead of everything sitting together and getting soggy.
Why I Add Chickpeas to a Grain Bowl
Quinoa alone is a good source of protein and fiber, but chickpeas push both numbers higher without adding much extra effort — just drain, rinse, and toss them in. It’s the same reason I lean on chickpeas in my dense bean salads: they’re an easy way to add fiber to a meal you’re already making.

Chickpea Salmon Quinoa Bowl Recipe
Flaky salmon over quinoa and chickpeas, tossed with cucumber, cherry tomatoes, and a simple lemon-herb dressing. Just as good served warm or straight from the fridge.

Ingredients
- 4 salmon fillets (about 4–5 oz each)
- 1 cup quinoa, uncooked
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley or dill, chopped
Dressing:
- 3 tbsp olive oil
- Juice of 1 lemon
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
Optional Add-Ins
- Crumbled feta on top
- Sliced avocado
- A handful of baby spinach or arugula under the bowl base
- A drizzle of tzatziki instead of the lemon-herb dressing
Instructions
Step 1: Cook the Quinoa
Cook quinoa according to package instructions, then let it cool slightly (or fully, if meal prepping ahead).
Step 2: Cook the Salmon
Season salmon fillets with salt, pepper, and a little olive oil. Bake at 400°F for 12–15 minutes, or air fry at 400°F for about 8–10 minutes, until cooked through and flaky.
Step 3: Make the Dressing
Whisk together the olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
Step 4: Assemble the Bowls
Divide the quinoa and chickpeas between bowls. Top with cucumber, cherry tomatoes, red onion, and a piece of salmon. Drizzle with the dressing and top with fresh parsley or dill.
Step 5: Store or Serve
Serve immediately, or store components separately in the fridge for up to 4 days for easy grab-and-go lunches.

- No quinoa on hand? Brown rice or farro both work
- Swap salmon for grilled shrimp or canned tuna on busy days
