I’ve written before about how nobody warns you about the GI side of GLP-1 medications — the constipation, the bloating, the “why won’t things just move” days.
Fiber became non-negotiable for me once I understood that, and it’s part of why I keep coming back to dense bean salads.
The Mediterranean version I shared is one of my regulars, but some weeks I want something with more kick — smoky, a little spicy, and closer to taco night than a Greek plate. This Southwestern version scratches that itch. Black beans, corn, bell pepper, red onion, and a lime-cumin dressing that ties it all together.
Same idea as before: it’s a “dense” bean salad, meaning the beans are the point, not an afterthought scattered on top of lettuce. That’s exactly why it works so well for hitting protein goals on GLP-1 — it’s a real meal, not a side dish.

Easy Meal Prep
Just like the Mediterranean salad, I make this in one big batch on Sunday and let it sit in the fridge all week. The lime juice and cumin actually mellow out and deepen after a day or two — it tastes more “finished” on Tuesday than it does the moment you make it.

Southwestern Dense Bean Salad Recipe
Black beans, corn, bell pepper, and red onion tossed in a smoky lime-cumin dressing. It’s a filling, no-cook lunch that only gets better as it marinates in the fridge.

Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 cup corn (fresh, frozen and thawed, or canned and drained)
- 1 orange or red bell pepper, diced small
- 1 cucumber, diced small
- 1/4 red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
Dressing:
- Juice of 1–2 limes
- 2 tsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Add-Ins
- Diced avocado, added right before serving
- Shredded rotisserie chicken or grilled shrimp for extra protein
- A drained can of black beans swapped for pinto beans for a milder flavor
- A finely diced jalapeño for more heat
Instructions
Step 1: Prep the Beans and Vegetables
Drain and rinse the black beans and kidney beans well, then pat dry. Dice the bell pepper, cucumber, and red onion. Chop the cilantro.
Step 2: Make the Dressing
In a small bowl or jar, whisk together the lime juice, olive oil, garlic powder, onion powder, smoked paprika, chili powder, cumin, salt, and pepper.
Step 3: Combine Everything
In a large bowl, combine the beans, corn, chopped vegetables, and cilantro. Pour the dressing over top and mix well.
Step 4: Let It Marinate
Refrigerate for at least 30 minutes, though it tastes even better after a few hours or overnight. Store in an airtight container for up to 4–5 days.

A Few Easy Tweaks
- Swap kidney beans for pinto beans if you want a milder flavor
- Add crumbled cotija or feta if you don’t need this dairy-free
- No fresh corn? Frozen and thawed works just as well as canned
- Make it a full meal by serving over a scoop of cauliflower rice or alongside grilled chicken
